I should have gone on to say that the standard WAV format cannot store tags in the file itself and that players like iTunes will store these tags in their own database. If you want these files to have tags that will show in any music player software that you might use, you may want to convert them to AIFF. (You could also convert them to FLAC if (a) you don't need to play them in iTunes or (b) if you are using the Pure Music iTunes add-in playback engine, which does support FLAC).
