Some additions to those already mentioned:

Howard Shore's scores for the Lord of the Rings films are an impressive accomplishment.

Probably my favorite film composer right now is Michael Giacchino. Check out The Incredibles, Ratatouille, UP, and to a lesser degree, the newest Star Trek. And his work on LOST is great, but doesn't make for particularly good listening on its own (for me).

Victory at Sea can't be considered. It's far to well written to compare with anything else listed , that is unless mabey someone suggested Porgy and Bess.

Of course those are very good soundtracks.
I would also vote for most of Bernard Hermann's soundtracks.

And keeping with the October theme, this is an excellent recorded soundtrack. I think it was available in DvD-Audio at one time.
