Is it best to use "test and copy" when ripping my cd's
or is it ok to just "copy"?

When I look at the copy results the is something that says "peak"
what does this number mean??
It always seems to be less than 100, usually around 94%
Is this something to be concerned about?

You'll want to "copy selected tracks". Then "copy compressed".

I wouldn't worry about the %.
Someone else may be able to explain better. Honestly I can't recall what than number is, but do recall being told that a number in the '90s is fine.
