Hi,

The website lists the 9B-SST2 to have a output of 140/8, however on the back of a unit I spotted the other day it says 120/8. Build date was in 2009.

Has the output been bumped up in 8ohms? If so, what else changed?

The SST2 increased the power to 140.

Then you will want to correct the owner's manual.  The manual on the website labeled "9BSST² Owner's Manual" still says 120W.

Backplate of the unit says 120W/8, not 140W/8, but its a 9B SST2, very confusing.

Is it just a misprint on the rear panel?

Yes it is a misprint - the checkout sheet that comes with the amplifier shows the power on each channel.
