Please shoot me a PM when you get to try small game birds Rob. I've had nothing but disaster with quail. Looks like SV could be the ticket but I'm at a loss on how to brown them evenly afterwards without ruining them.

But I will let you know when I get to that. I have read that SV is especially good for just that purpose. Quail and some other small game birds are hard to do without overcooking. SV is supposedly the "magic bullet." We shall see.
