You are actually missing a software to use as a player like foobar or winamp.  Exact Audio Copy, if that is what you are asking about, is designed for accurately ripping music from a CD to a hard drive.

It varies drastically but I would guesstimate 250-400 MB per single disc album in FLAC format.  You're on the right track by planning to use an external hard drive-speed of access is pretty much irrelevant.

I think I have around 8200 FLAC songs on a 500 gb drive and am only using just over half that memory at present (with artwork).

I also have quadruple back-up since memory is so cheap.  Re-ripping a library is not so much fun, eh!
