How to bake a fish in a barbie?
« on: 10 Feb 2011, 09:43 am »
I'm having a few folks over on Saturday and would like to bake a largish fish. I don't want it totally wrapped/sealed as then using the barbie seems pointless, I might as well use the oven. These aren't steaks, I want to do a whole fish. Any suggestions? (Both on how to do it and what type of fish works best - I was planning by default to see if I can get a salmon tomorrow at the fish market. We'll have a day to marinate it.)

The barbie is a weber Q220.

I keep the fish on a soaked plank when I don't want to wrap it in foil or banana leaves. Cedar always works but you can try Kiawe or other popular woods. Enjoy the Barbie!

Foil works fine on the grill, just leave it open so that the meat or fish gets some smoke. Of course, it won't add flavor the way a plank will.
