Airplay is finicky from why I've heard right now. One of the problems in theory is the iPad currently only has 256 mb of ram. One solution I suggest is to make sure you don't have a gajillion other apps open. I know apple says the APIs should not interfere with foreground or background operation, but trust me they do. Another thing make sure you have reset your iPad or iPhone if it's giving you a lot of grief. The only way to properly do it is to hold down the power button and home button UNTIL you see the apple emblem, not until the "slide to turn off" screen shows up. Trust me on his one they are not the same thing.
