I know the 6bj8 is a sub but does it "sound" as good?  It would be for my sherwood s-3000V tuner....

Since the triode section is a cathode follower it's likely not too critical.  The other 2 sections are in the detector circuit.  In other older tuners I've used either tube in the past.  If Sherwood used the 'N' that's what I'd use, with the 'J' as a temp substitute. JMO
