iTunes doesn't keep fields intact when importing

:?  I can't find this issue addressed anywhere.  Could someone please help?

I rip my CDs in .wav onto a NAS device using audiograbber, and I manage the files with MediaMonkey.  In MediaMonkey, the file structure is fine -- by that I mean that artist name, album, track, genre, etc. all appear in the proper fields.  But I just bought a macbook and so I'm trying to use iTunes.  So when I try to import my songs from the NAS into iTunes, I lose all of the fields, so that the artist, album, and track number is all put together into the 'Name' field.  What am I doing wrong?  Thanks very much for your advice.

Due to the fact that WAV files do not store track metadata (unlike FLAC, ALAC, AIFF, etc.), playback applications work around it by parsing it to a nesting of directories. Unfortunately, there is no standard for the sequence of these directories and each program handles the process differently.
