I stayed in Colorado Springs the week after RMAF and went on a mini Chile Verde tour there.
I had Green Chile Stew at four different places ranging from medium to scorching, with different variations of ingredients, such as tomato in one, riper chile's in another which gave it a redder cast, potato in most, and Hatch Chiles and pork in all of them. One I think even had TVP (textured vegetable protein) instead of potato.
The most flavorful and hottest was at "The Loop" in Manitou Springs, CO.
The second hottest was breakfast at "The Western Omelette " in The Springs, where I had their mild Green Chile sauce over Huevos Rancheros. Whew!!!
I usually get the half hot and half mild, but my server warned me off, thankfully.

Except for breakfast, all chile was accompanied by awesome local brews including Laughing Lab, Yeti, Fat Tire and a Zebulon's Peated Porter at Phantom Canyon Brewery in Downtown Colorado Springs.
It's been almost a week and I couldn't stand it any longer so I whipped up a Green Bean Casserole with some Big Jim Hatch chiles and Pork Chops.
