I would like to use an iPod as my source for music out by the pool.
I'll plug my iPod into an H/T receiver.
I need an interconnect: mini (iPod) to stereo RCA jacks.

This will not be critical listening.
I found a Monster IC on Apple's site but one of the reviews said that the connector is too big to allow the charger to be plugged in at the same time.

Sometimes we're out by the pool all day so I need to plug the iPod into an electrical outlet as well.

Any recommendations would be appreciated.

there are hundreds of  mini headphone [aka 3.5mm or 1/8] to female RCA
cables out there.

you can buy a simple mini headphone to female RCA and use your own RCA cable. These are a few bucks. Radio Shack, Monoprice, etc.

you can buy a cable with the mini headphone on one side and RCA as you say. So many:  Monoprice, Belkin, Monster Cable, AudioQuest, BlueJeans Cable....

BUT the key when using a mini headphone cable is to use an ipod dock--even if it is not critical listening. The apple dock bypasses the internal ipod amps (the ipod volume is constant). The sound can get very distorted using the ipod's headphone jack--you have to set the ipod volume at 60% max to prevent distortion, then use the HT Receiver volume. But the dock sounds so much better. This is true in a car and home. in car the ipod connectors have a second jack coming off of the adapter.

OR you can go top shelf and get an ALO 'Ipod to RCA ALO Cryo POCC Wire'
