Tonight, weather permitting, I am going to grill a pork roast. I usually only season this with salt and pepper and use the "indirect method" on the Weber Grill (not directly over the coals). Most people make the mistake of covering the bottom of their Weber grill with charcoal. That is just plain wrong as you have no differential temperature zones. Placing the coals along one side in a pile gives you the options of searing, and gentle bake. I'm also going to BBQ some cabbage, which is some of my most favorite things to grill. We'll also do a baked potato. It's Friday night and we usually have some beer (for me), wine (for the wife) and a nice meal to celebrate getting thru the week.

For the seasoning mix:

1 Teaspoon Kosher Salt.
1/2 Teaspoon Onion Powder.
1/2 Teaspoon Celery Seed.
1/4 Teaspoon Fresh Ground Black Pepper.

Combine all of the above ingredients in a small mixing bowl.

1 Medium Whole Green Cabbage
4 Tablespoons Butter

Using a sharp paring knife, remove the core of the cabbage. Leaving a cavity about 3 inches deep. Gently pry the cabbage leaves open with your fingertips. Spread the butter in the cavity and between the leaves, and season the inside and outside with the seasoning mix. Wrap the cabbage in heavy aluminum foil so that all but the cavity is covered.

Grill the cabbage cavity side up over the indirect method (not directly over the coals) and grill until tender, or between 2 to 2 1/2 hours. When done, remove from the foil and cut into wedges.

If you want, put more butter on it and more salt and pepper.

When I cook indirect I use these http://www.grillstuff.com/weber-char-basket-charcoal-fuel-holders.html?productid=274 and place the meat in the center keeping the grill hinges over them if I need to add any more charcoal.

Seeing how some people live like pigs, I can understand the farmer's fears. We live in a slightly upscale neighborhood (newer part of town), and some folks moved in next door. For 5 years, it was a stream of police cars, yelling, screaming and kids crying. I think the police even hauled the father away a couple of times.

Well, I think they got a divorce, and after a 1 year move, we finally have new neighbors. I guess the house was trashed inside, with holes in the walls, filth up as high as the kids could reach and the carpet seemed to "move" in some rooms (the new kids aren't allowed in some rooms). I heard the house had tunnels through it, and that is why it took them a year to move.

I hate to be a segratist, but it's nice to live among people who share the same values, even if we all aren't best buddies, we can still get along, watch out for everybodies kids.

I would say I am more shocked that people eat all that factory meat that they have no idea how or where it was produced.  Shove their pie hole with unknown crap by the spoonful.  Personally I think its ok of people lay off the grocery pork.

And unless you go up to a LIVE breathing pig and have it sneeze ya in the face, you should be okay...
