I've got a couple of nice snapper filets on standby in the fridge but am feeling totally unimaginative/uninspired. Would anyone happen to have a good recipe you could share? Something with ginger and lime might be nice. Surprise me!
Thanks

Red snapper...my favorite.

This is the simplest thing in the world.  Take garlic, ginger and green onion.  Chop it all up (julienne the scallion) and sprinkle over the snapper.  Then steam it (or, just as good, microwave it for just a couple of minutes).  When it's done, sprinkle cilantro over the top, and pour a couple of tablespoons of soy sauce over it too.  Then heat some peanut oil (or some other oil that can get HOT without smoking), and pour that over the snapper.  The hot oil is vital, as it instantly releases HUGE amounts of flavor.

I'd usually serve this just with rice.
