If you put lets say a 100uf bypass cap on the cathode of the first two tubes that would increase the gain. But what else would it do to the circuit? I do not understand the riaa stuff very well.

Yes, you could increase the gain by bypassing the cathodes. It also greatly changes the equivalent plate resistance of the tube (about a factor of 2 in this case). The EQ will therefore be screwed up. You'll need to change the EQ caps and resistances.
The cathodes were purposely left unbypassed for better sonics. A simple design tradeoff - more gain or better sound.

IMHO one of the many design strengths of the Cornet is that there are NO CATHODE BYPASS CAPS.
Another is that, at $99 for the board and about and a few more $$ for parts, it is darn near free!
