You can buy the $599 model and add a 500GB HD and 4GB of Ram for less than $200 price difference between the models. Thats my plan.
Isn't it a PITA to open up this thing? I saw a video of this w/ the older model and it wasn't very simple.

No, you just need to stick in a putty knife and it pops right open. It looks harder than it is. You don't even have to bother unscrewing any screws.
It is more complicated than in early models- now you need to remove the mobo, HDD, and OD (IIRC) to add RAM. It isn't right under the top cover like the first gen.
I agree that that $200 seems like a lot. I despair of Apple pricing sometimes. I have never been able to figure out why they could sell the PPC mini for $499 and make money, but the Intel minis have to cost $599.
If you can get it open (and more important, back together) without destroying it, OK, but my suggestion for prospective Mini buyers would be to buy the base model from an authorized dealer (most charge a lot less for RAM) and get one of those stacking HDs to add storage.
