I have cooked a Christmas prime rib for the last 5 years or so.  In the past, I would find recipes over the internet and give them a try, but I have yet to find a recipe that will find a permanant home in our recipe box and be pulled out with excitment every Christmas.

Suggestions?

All I do is give it a dry rub of garlic powder, seasoning salt and black pepper. I do this at least an hour before it goes in the oven. I don't put it back in the frige. after this is done. Put in in a 325 oven. Use an external digital thermometer. No guessing about how long to cook when you use a thermometer.

I rub mine with cut garlic cloves and then rub with the sesoned salt & fresh ground pepper. Also leave out to get roast to room temp. Then, depending on the size, I put it into a 475 degree oven for the first 30 - 45 mins. Then knock down the temp to 325. And most definitley use a thermometer.
I stick mine in the raw roast and observe temp. as it cooks. That way your not poking holes in it that will allow juices to escape.
Serve with Yorkshire pudding and hot horseradish.

Fine Cooking Magazine always has excellent recipes. Here is the prime rib dinner from the Dec. 06 issue:

How to Roast a Perfect Prime Rib

A group of friends got together this Thanksgiving for a pot luck. We all picked a recipe from the Fine Cooking Thanksgiving menu, I made the rustic bread stuffing and the cauliflower with brown butter, pears, sage and hazelnuts side dish. We all agreed it was one of the best Thanksgiving dinners we ever had.

I just came home from the butcher with our 5 bone standing rib roast for Christmas dinner. The recipe for cooking this has turned out to perfection for the last 7 years or so.
If you use this you will never cook a roast any other way.I guarantee it.Just make sure you have a great digital(audiophile approved) thermometer as you don't want to overcook the greatest roast you will ever eat.
The meat just comes out perfect following these directions.

Bill:
The only problem with that cooking method is you don't have a lot of time to enjoy Xmas schnapps while the roast is cooking.

This is the best way I know to do a standing rib roast - always works perfectly.

Thanks for the tips boys.

Tomorrow I'll be picking up the roast, digital thermometer and a lot of extra beer.  I think I'm going to try the Foodnetwork method, but may include just a touch of garlic as a couple of you suggested for that "little extra".

Digital thermometer!?  :o
What all this about digital?
I'm analog all the way.

Ooops sorry, wrong topic.

 Great recipes guys, thanks. I'm eager to try some of those.
Sorry about the analog thing, seemed like a good idea when I thought of it.

As long as your using Sonic Rocks and coat hangers, who need analog?

Of course I changed the wire leading from the probe to the digital readout.Went with a 15 gauge solid core copper as the silver cable provided with  the thermometer seemed a little hot, the copper has a warmer reading.

If you want to get it done fast, simply set the oven on self clean.
