Shrimp/sausage/spinach/pasta/pesto salad

Wife made this up yesterday.  When first hearing about this salad I shamefully admit I considered running down to Center St Grill in Logan to grab my favorite 1/2lb hamburger on whole wheat w/ fries cooked in the best vegetable oil.  After repenting & trying the salad I'd rate it one of best (29 year veteran of some great salads cooked by old-time gourmet San Francisco Firehouse chefs)

Fresh crisp small oval-shaped spinach leaves (the expensive kind in the hard plastic container)
Fresh cooked med-size shrimp
Turkey sausage cut up very small (very little, used only one med-size sausage for about three servings, more of a flavoring)
Low-fat shredded mozarella cheese, not too much
Parmesan cheese to flavor
Fresh tomato (light quantity, chopped fairly fine)
Small can black chopped olives
Small can or jar mushrooms, chopped fairly fine
chives dry
parsley dry
ground black pepper
Whole wheat lasagna pasta, chopped moderately small pieces
Add dressing made from pesto sauce blended w/ Girard's Light Champagne Dressing

Serve all well chilled.  Great w/ "Three Brothers" Decker Five-Seed bread, but only available in Utah so you're on your own there.

When working at Sta 19 near Stonestown in San Francisco (my retirement house near UCSF) we ususally shopped at the old Fairlane Market in the Sunset & 40th/Ulloa St, which is of course a Chinese market now.  They had only Chinese parsely, which IIRC all co-workers that day agreed made about the best pesto ever; highly recommended.

BTW, that market probably has the lowest prices in the entire Bay Area, esp for produce.  As far as ambience/fellow shoppers/employees it's like walking into Hong Kong, in other words-fun!

Enjoy!~ Great circle!
