OK to leave sub on with no inputs connected?

And part B - If I run one channel to each of my two subs is it OK to just connect the one line cable to one input or do I need a Y-cable to connect same line to both inputs? And does it matter?

Unless you have an "LFE" input,  you may have to use a "Y" cable to get the signal to the left and right channels because many sub-woofers have dual wound voice coils. You'd be runnin' on only one cylinder, if you get my meaning

Wayne is correct with many subs. However, with our subs you won't need Y-Adapters, they're not dual voice coils.  You can leave on all the time. BUT, either turn off, or turn volume all the way down when plugging RCAs in the inputs or you'll get a big THUMP.
