I might be misunderstanding you, but if I read it right the ACI sub has a plate amp with high-level inputs on it? And those are RCA jacks?
"Speaker-level converters" make me think of a line output converter, which takes line-level audio and converts it to speaker-level...which I don't think is what you're describing here. I think ACI just included adapters so you could take bare speaker wire and plug it into an RCA jack, while still being a high-level signal. In that case, yes, using any kind of speaker wire you want with an RCA termination will do the trick.
Just doesn't make a ton of sense why they'd do that, most of the plate amps I've seen have 5-way binding posts for high-level inputs and RCA's for low level, makes things nice and simple
