Cooking shish ka bobs this weekend and looking for any new ideas.
We will be doing steak and chicken.
The chicken will be simple (kids) = chicken, pineapple, ?  Need something else to put on there, citrus based.  For marinade I was just going to use the pineapple juice with a little oil and touch of viniger.  Maybe some lime juice.

The steak = steak, onion, red pepper, mushrooms  probably in a Montreal steak marinade.  Looking to use sirloin.

Any ideas to try or favorite recipes?

BTW, we need some culinary smilies  :)

Doubt this would be appropriate for your weekend, but I thought I'd share a favorite chicken kabob recipe FWIW. This quantity of marinade is for three boneless breasts, adjust quantity as needed.

juice of one lemon
three good glugs of quality olive oil
2-3 smashed and finely chopped cloves of garlic
red chili pepper flakes to taste. I really like either Chimayo red chili or the smokey red chili flakes you get in Korean grocery stores.  If you don't like heat, use good paprika. I use about a tablespoon of medium hot flakes.
salt
coarse black pepper
1/4 cup chopped cilantro
2 tsp. ground cumin
If you've got it, 2 tsp. of middle eastern spice mix like a shwarma or tikka mix. otherwise a mix of allspice and coriander is ok.

Mix up your chunks and marinate for at least three hours, overnight is great.

Here's a rub I use for steak and it always receives good reviews. This amount is per one pound of meat. It also works good on marinating the vegetables when you add a little olive oil.

1 TB Montreal steak seasoning

1 TB brown sugar

1 tsp onion powder

1/2 tsp oregano leaves

I rub it on the night before grilling and it has excellent flavor. Let me know if you try it out.

For either chicken or steak:

You'll need large onion, a couple of bell peppers (preferably red, yellow or orange), a couple of tomatoes.

Cut your meat (preferably partially frozen - easier to handle) in about 1"-1.5" cubes.
Cut the veggies in squares that are approximately the same size. I.e. for the tomatoes, use only "the walls".
Start by skewering 1 onion slice, 1 pepper, 1 tomato and add the meat. Keep doing that until the skewer is 80% full.

After all the skewers are populated, season and marinate them for at least 1/2 an hour.
Use the marinade to brush the skewers while cooking (preferably over coal/wood)

These are a lot of fun for kids to make. They love to participate.
Obviously, you can use any veggies you'd like such as mushrooms, zucchini, artichokes, potatoes, etc.

Have fun!
PS Lamb is also awesome with these...
