Honey Carrot Ginger Soup

With a dash of coconut cream of course...  :D

Who has a great recipe and could you please post it?

How I would do it off the top of my head. 

1 large onion
6-10 carrots peeled chopped
4 cups veggie or chick broth
2 ribs celery
bit of thyme
1/8 cup fresh graded ginger
3 cloves minced garlic
1tbs garam masala
salt pepper to taste
bit of cream and honey

Throw every thing except honey and cream in a pot and cook until tender. Blend with hand blender.  Strain with fine metal strainer or food mill.  Mix in honey and cream.  eat.
If you have a good curry powder that will go great also.  For this I would like a sweet one with some saffron

I had it for the first time the other day in a Vietnamese restaurant and it blew my mind!  Having poked around the internet there seems to be a number of angles on how to go about this recipe.  As with all things cooking, that is to be expected.
