I'm just wondering how it would work to use a driver with a Qts of say 0.3. How much earlier would it roll of than a driver with Q = 0.7.

Was thinking of pulling drivers out of some old Dynaudios to have a listen in OB but I would have to buy more mdf first.

Given that I never listen at more than 80db, and provided I had a stout amp and DEQ, could I make any driver work in OB on a reasonable sized baffle? I would only have to get them flat down to 150hz as I have dipole subs to take over from there. I'

There are several good, inexpensive modeling program that will give you a very good answer.
I use xbaffle, but there are newer things available.
Rule of thumb is that .3 will start to roll off an octave or more above Fs, rather than at Fs.
