All of the Riverside recordings are well worth having: Portrait of an Artist, Everybody Digs Bill Evans, Sunday at the Village Vanguard, Waltz for Debby, Explorations, Moonbeams and live at Shelly's Manne-Hole come to mind immediately.

The later recordings, mostly on Verve, are also very good and highly regarded (Conversations with Myself, etc.), but not quite on par with the above, IMHO.

There is lots more on "Kind of Blue" than Bill Evans (Wynton Kelly does play on "Freddie Freeloader").  But this album, to me, provides Bill Evans at his finest.   I have heard the album so many times and I am nearly always moved by it.  The modal format is so thoroughly reflected in Bill's playing that I have found myself listening mostly to the piano at times, such beautiful and intricate chordal progressions.  Almost every time I hear it, something else of beauty is revealed.
"The Tony Bennett/Bill Evans Album" is also a favorite LP.  Even though my copy was scratchy when I found it, it still makes me shake my head at the completeness that a piano and voice can achieve.  Some of these songs aren't in my top ten but the performance never falters.

 There is a real good recording of his called "From Right to Left". He plays the hammond b3 organ (I believe) on it. He sounds great on it, amazing highs. I"m not sure if its rare but I hadn't seen it till recently.

One of Bill Evans' recordings that has always fascinated me was "Undecurrent". It is a duo with guitarist Jim Hall and, if I may quote a reviewer because I totally agree, "the collaborations are often exquisite." Plus, the cover (a photograph) , is one of my all-time favorite artwork covers. The quality of the recording, though not superb, is still very enjoyable.
