I hadn't really thought about this before.. but here's a few things.

MINOR chord changes
A good bass guitar line (I always try to follow this, usually with my toe )
Some lyrics (Hey, they can make or break a song)
Strings, when not overdone.
Tight vocal harmonies.

Certain female vocals.

Thoses I love:  Iliana Cortrubas, Renata Tibaldi, Montserrat Caballe, early Maria Callas, Sarah Vaughan, Patsy Cline, Loretta Lynn, Natalie Merchant, Chrissie Hynde, Eva Cassidy, Lee Ann Womack, Joan Armatrading to name a few. And Choral music.

Those I can't stand:  Diana Krall, Billie Holiday, Regina Resnik, Sarah McLachlan and more.

Don't know why -- just happens.

and now the serious answer...

I always wished I had the ambition to learn music theory because then I would know what all the chords are so I knew what certain combinations 'move me'.  Because there seems to be some recurring themes that I like, I just don't know what they are.  Now take Lonewolf, he's got it all figured out: music makes him feel like Michael Flatley about to give a Powerpoint presentation!

For me, its the emotion of the performance and the vision conveyed by the music.

I appreciate skilled musicianship, but hardcore musicianship without the emotion leaves me cold.  I'll take The Clash over "smooth jazz" any day of the week.

Great question.  I agree with nathanm here, I would love to know more about music theory.

For me, gosh, I have no idea.  I like everything from Toby Keith to classical; too many outliers to readily discern a pattern.

One thing I will say... what music moves me almost entirely depends on my mood.  There are very few tracks that I can say always move me.

  Hi,

In the immortal words of Count Basie when asked what his music was about
he said "Pat Your Foot"  The music must move me emotionally; it does not matter what type of music it is.  I noticed that a previous poster stated that Billie Holiday was not some one he could listen to.  I am just the opposite.  I know that she had no voice, and even that diminished as she got older; but to me no one, and I mean no one could capture the essence of a song like her.  If you ever had your heart broken in love listen to Billie Holiday sing, Gee Baby Ain't I Good To You.  You will just find yourself nodding your head in agreement.

P.S. Smooth Jazz is a contradiction in terms, and a blasphemy unto the lord.

I agree with the Count and you. Ans smooth jazz for the most part just gives jazz a bad name.  Regarding Billie Holiday, she is a singer many like or really don't like.  Although she is a singer I think who's voice just was so representative of the style of music of the period.  Her voice just sounds just like the horns sound on the recording...hmmm  I always thought is was her gift but I could be wrong.  It is odd to me that you would say she hadno voice but captures the essence of a song   I've heard many of bad voices and non singers and non of then capture the essence of anything except sounding bad.
