One possible reason for the 2' x 4' sizes is that they (at least it looks like GIK's) are made from ceiling tile that come standard in these sizes. It seems that it is difficult to get a very clean cut to make them into different sizes. Also, I've been told obsorption requires square footage of coverage, so in the case of bass obsorbers, bigger really is better.
As to colors, I have no idea. I will say that the off white color that GIK uses matches my wall color perfectly.
If you have a color you want, and you can find the right material at a local store, you might want to give RT, GIK, or 8th N, a call and see if you can send it to them to use in making your products. At the same time, you should talk to them about the size you want, so they can build your products to your exact needs.
