Is it possible to add more capacitance to an existing amp? Could you open it up and replace it with bigger and better caps?

Sure. Although if you don’t know what your doing then it’s best to see what other amp makers do and be practical. Sometimes more isn’t better and in certain circuits may cause problems.
What amp are you thinking of?
