I want to utilize the RCA digital out of my Art DI/O do make recordings of LPs via my PC.  I remember reading something about doing this, but can't seem to find it.  Is this doable and if so can someone please direct me to some info?  Thanks much.

There are sound cards that have S/PDIF inputs.  You dont need USB.  Try emu.com

I use a device called the M-Audio Transit. Plugs straight into my USB port and works perfectly for recording LP's. Cost me $US68 from 4beatz.com.

This is not as good as the Transit.  It does not require any drivers, but cannot bypass Windows Kmixer and cannot support 24/96kHz bit-streams.  This is a means to convert USB to S/PDIF.

What the poster is asking for is a means to input S/PDIF to a computer.
