It's my understanding that I should have a dedicated 5khz network (?) for my steamer to maximize streaming.
I assume you mean 5GHz network. Your Airport Extreme is a dual band router that has two wireless radio networks, a 2.4GHz WiFi network and a 5GHz WiFi network. To have the 5GHz network "dedicated", you will want to restrict access to just the Aires streamer.
I believe by default the 2.4GHz and 5GHz will share a single WiFi network name (SSID). In the Airport Utility application under the Airport > Wireless tab you will name the (2.4GHz) network, then you can click the Wireless Options button at the bottom to give the 5GHz network a different name. This will prevent devices from automatically choosing one or the other.
To prevent other devices from inadvertently connecting to the 5GHz network, you can use MAC address filtering under Airport Utility > Airport > Access tab and enter the Aires hardware MAC address.
Note that MAC address filtering and even hiding the SSID are not meaningful security measures, as a hidden SSID can be easily found and a MAC address can be spoofed, but they will prevent your family and friends from intruding on your "dedicated" 5GHz network.
Your WPA2 security passphrase is really the only security measure against hackers.
Also note that although the 5GHz band generally has less interference, it also has a shorter range than the 2.4GHz network, so your distance, type and number of walls, etc. will determine if the 5GHz band will work well in your particular installation.
