I've decided that I need to go to the dark side from my Droid.  The question is I'm a big Google/Gmail user.  Will the iPhone play nice with the Google, Gmail & Gmail Contacts?

Yes. No issues.  You can either use apple mail or googles app which plays nice. I have a 4s and a 5 no problem here.

Is gmail still not instant on IOS?

By instant, I assume you mean push email, which Google offers using the Microsoft ActiveSync protocol.

Google disabled free ActiveSync in January.  You can still get IMAP based email (15 minute wait), or you can pay for ActiveSync, or you can use the Gmail app (which has push capability built in).
