A couple of questions :

Is there any reason not to put both channels on one baffle ?
(if the spacing fits the listener) .... Thus saving a baffles worth
of space.

Will a single 'wing' in the middle of the baffle do the same widening
as the usual 2 wings down each side of the baffle ?

That is a first for me, I have not thought of combining two baffles into one like you describe.

I will leave the math to the guys better equiped.

As for could it work - I would think so, and dividing the baffle as you describe (I am assuming a vertical element) should work.

But, how large will that baffle be?  The largest I went was close to 3 feet per, and I always had 4 feet between the speakers.  I cannot fathom how large a baffle you would have to live with!

Not sure either, if the vibrations would cause issues for a baffle of that size.

For a moment lets just pretend that there is only one driver on that baffle. This will be heavily offset on its baffle - with the nearest edge to the outside.  The result is a significant bending of the dipole 8 to the outside - at front and back.
If your baffle is 2 m wide and only 1 m from the front wall, there may develop a sort of transmission line between baffle and wall.
There is no rule that the space between two baffles has to be "a baffles worth of space". But I would keep them at least 1 foot apart.

It could be 3 feet per ...... BUT .............No 4 feet apart ........
Max 3 feet apart (oversimplyfing) .......
I.E....... With 8 " drivers on a 2 ' baffle (4 ' high ) with a 2 ' centerwing
If Fs ~100 and Qts ~ 1 then F3 ~ 100
BUT ....Distance between speakers ~ 1 '
Can be scaled up though ..... Perhaps more of a quasi nearfeild type thing
