dbpoweramp runing in a Windows partition / virtual machine on your Mac. It's as close to a "insert and forget" solution as you are likely to find, once you get your ripping and naming parameters set up (which can take some twiddling).
I rip in the background typically while I am doing other stuff on the machine. Literally, insert CD, hit "rip", do something else until you get the popup window telling you it's done.
If you have iPods or other devices that can't practically use lossless files, it's pretty easy to set up dual rips to FLAC or Apple lossless and also to a compressed file. I have two directories on my big external drive, one for FLACs and the other for AAC for my wife's iPod. Once set up, it's all automatic.
It won't run native on Apple OS, but so what...you probably will have other stuff that needs Parallels or VM-Ware anyway.
