Using a quality stereo amp for 5.1 sound

Hi, it's my first time here...

I prefer the qualities of a good old stereo amp and a good set of speakers, although I'm sure a dedicated 7.1 receiver delivers lots of excitement...

Still, I've plugged my Sony Blu-Ray to a Bravia through HDMI, used the analogue audio out RCA's from the Bravia to connect to a stereo amp, and I'm getting some nice results.

Question is:

The Blu-Ray has a stereo/surround downmix option, AND the Bravia also has a stereo/surround downmix option (when you select "audio system" from the tv menu, and go to advanced options).

Well, I'm using a stereo amp with the Bravia serving as a receiver/preamp. The Bravia has Dolby Digital Plus circuits, of course.

How should I set up the downmix options for multichannel discs?

I'm not familiar with the Bravia set up but if you are getting a stereo signal from the analog (L/R) outputs the TV must automatically mix down any 5.1 or multichannel audio signal before outputting to the stereo analog outputs..
