I use the "iron-on" method too. Its pretty much the easiest and proven method, especially for beginners like I was.
The other really helpful tip that I learned the hard way was this:
"The router bit may scar the veneer where the bearing rides against it. Use low-tack tape to reduce scarring by the router bearing"
Indeed, don't use the the router bit on the raw veneer itself, it will scar the veneer. If you mask the veneer off, you will get a thumbnail-like hang over which can be sanded down to flush. I found I was pretty good with an exacto knife and trimming it down, ymmv.
