Japanese Knife Set for Christmas

Looks like I'll be getting a nice Tojiro DP set of knives for Christmas. It's my first set of Japanese knives. :thumb:

DP Chef 210mm
DP Petty/Utility 150mm
DP Paring 90mm
DP Bread 270mm
DP Nakiri 165mm

I will also getan Idahone 10" ceramic rod and maybe a Forshner 10.5" slicer.

Any recommendations on a sharpening set?  Chef Knives to go recommends the Apex Pro sets, but they are pretty expensive.

The EP is worth every penny!  And those Tojiro DPs are nice.  Even though I have more expensive knives I still keep a few DPs in my work kit. :thumb:

NB

I'd recommend against the Apex and take the opportunity to learn how to do it right: freehand.

Total PITA to learn, but insanely satisfying once you get the hang of it. Check out the Knife Forums if you're curious. Interesting group over there.  :wink:

Congrats on the knifes!
EP for me. LOTS of people at the knife forum referred to above are fans of the EP Apex/Pro. If you have the funds get the Pro. I have the Apex and sometimes wish I had gone pro from the start.
There are two distinct camps on sharpening forums - free hand versus EP or similar. You can keep knifes RAZOR sharp either way. You just make a different profile of the edge.

I've been using waterstones to sharpen kitchen knives, woodcut tools, and Japanese wood block gouges/knives/chisels by hand for thirty years and I'm ready to pull the trigger on an Apex system myself. In spite of being as careful as possible, when I use a 10x loupe to look at the edge of a knife that I've hand sharpened for numerous years, I see minute wobbles and variations in the bevel that can't be good for ultimate sharpness. I think the Apex system would be great for occasionally straightening and truing knife bevels back to a constant angle. Maybe there's a place for both hand sharpening and sharpening systems in the long term.

I'm an EP guy that came in from free hand.  I will strongly endorse the EP.  No matter how long you practice or how good  you get freehand you can't match the precision of the EP, and I tried for a couple decades.  But it's not a 'sharpening toaster'- you can't use it successfully if you don't understand the mechanics of sharpening.

An EP Apex Pro set it is.  I have limited experience sharpening hunting knives with stones, but I want something that will maintain a consistent edge angle.  Looks like the EP products are the way to go, great reviews.

My wife ordered the knives from Chef Knives to go on yesterday and they should arrive tomorrow via Fed Ex Ground.  Very quick packing and shipping :thumb:

Very cool!  Can't beat CKtG.  Sadly though I was out of the house when the mail man came and now I gotta wait to get my order from the PO downtown in the morn! :duh:  I've got two Tojiros and a strop made of Kangaroo leather in this shipment! :thumb:

I love my Tojiros  :)

Now I just need to learn how to sharpen them myself hehe.

The name sounds dumb/cheap......but Global Knives (aka Yoshinkin) are great.
