Usings EAC to rip FLAC files... make the beeping stop!

A somewhat related question-how do you guys organize your music files on your hard drive?  I ripped a whole bunch of CDs to mp3s for my wife to take to her business.  I put them in subdirectories, one subdirectory per album.  That doesn't seem to be the most efficient way-I'd like to toss all the tracks in one directory with seperate track listings for her to load for each album if she wants to play them that way, or just random play from the whole pool.

I may start from scratch and use FLAC files, to have music at my music and for a future music server at home.  So any hints on organizing FLAC files would be appreciated also.
