What is the benefit from going from a dual open baffle sub to a triple open baffle sub?

More of everything -- bass, soundstage, dynamics, improved imaging, better midrange, etc.

Cleaner, more effortless. With duals, each driver does half the work. With triples, each driver only has to do 1/3 of the work. So none of the drivers have to work as hard.

I have duals in my upstairs setup and triples in my downstairs setup.  The obvious/expected benefit is more headroom, and that's certainly true.  But the thing I didn't expect is just how much more percussive and just downright MEAN the triples sound.

If you are going to LSAF 2023 in June in Dallas TX, you can hear the 3x12's with planars if interested.  Will have them in my room. 

Time for some pipe organ music! :)

Will have Qobuz for other music.

So the subs actually play some of the midrange or are they taking base away from the mid woofers?

They cover mid and upper bass, up to 200Hz if need be, but it depends on what you are pairing them with.  With Wedgies you would need to go up to 200Hz, with my NX-Otica MTMs I cross at 80Hz and with full size NX-Oticas it would be 60Hz or lower.

Does that frequency change with how loudly you're listening?  For example, below 85 db cross at 80 Hz, at 90-95 db cross at 110 Hz, 100 db and over 150 Hz (random examples).

The point you want to cross to the subs is where the main speakers are 6dB down. This will vary depending on the room and the setup. In my room it turns out to be 80Hz. Some people can determine this point by ear. I'm not one of them so I use REW.

I only use a high pass filter on the MTMs to roll off the bottom octave but you can high pass the MTMs higher if you want to. What SQ differences there would be by filtering and crossing higher I don't know because I haven't tried that. As a point of reference, in the full size NX-Oticas, the MTMs are crossed to the 4 bottom M165s at 200Hz.

Makes me curious how much the quality of the amp plays into this spectrum as well.

Quite a bit. The NX-Oticas, either MTM or full size, are very revealing so the better the signal they get is, the better the sound they produce. This doesn't mean you need an expensive amp, or any other component, to get great sound from them.  Just that the better the electronics are, the more you get from the speakers.
