Newbie questions about the Mini

Guys:

Let me apologize for my questions in advance but I am about to take a step into the world of computer audio.  Over the past 3+ years I have been streaming Flac files, via Squeezecenter to a Squeezebox and more recently to a Transporter.  I have decided that I want to switch to a USB DAC.  I envision the system as:

External HD to Mac Mini to USB DAC to Preamp to Amp.

I currently own a PC Laptop and of course a PC Desktop.  I have had PMs with a couple of guys here on AC and they recommend I purchase an IPod Touch to control the Mini.  Would it be possible to control the Mini with my laptop PC? 

Also, I cannot have a monitor on my audio rack and thus would want to use the Mini purely as a music server (no internet browsing or any other computer functions).  I own a spare LCD (PC Monitor).  Once I get the software loaded onto the Mini can I do what I want to do (serve musis to the DAC) without a monitor with just a Touch or my Laptop PC?

Your PC laptop to control the Mini might be possible but it might be convoluted. 
I think desktop/remote PC access would be key but I also would think it would involve some security risk involved. 
The best solution would be an Itouch, even the smallest capacity would do.  There is a free app called "Remote" which gives you 100% access to your Itunes music library.  It is foolproof and after first setting up the MacMini, you will not need a screen to make it work. Nevertheless when it comes to ripping physical CDs etc...you will need to have a screen attached for those ripping sessions.  Also, the Mini will need to be on all the time if you want to access music instantly and control the tracks via the Itouch.

Thanks for the response.  A 50" Pioneer Plasma TV sits on top of my audio rack.  Would it be possible to use the Plasma Screen as a monitor since I will not be using it very often?  If so what would be required?

Sure.  A Mini DisplayPort to HDMI cable is all that you would need.

You an also use a remote to control the mac mini if you are going to connect it up to your TV.  You can either buy the $20 apple remote or perhaps a programmable remote already have the code there.   Essentially you will be controlling an application called "frontrow" which is apple TV like.  I still use the remote app for the iPhone/iPod touch though.
