Tube rolling refers to using different tubes with the same pinout within a circuit to possibly obtain different sonic results. For example, sometimes a 12AU7 and 12AX7 are interchangeable.
On a more basic level, tube rolling can simply mean subbing a Ei 12AU7 for a vintage GE 12AU7.
More can be said about tube rolling- but with power tubes it can get more complex as several variables have to be watched.
