I ended up with some prostate problems after overdoing it on some bhajis.
Please explain for the rest of us, not so in the know.  :scratch:

Bhaji: A type of pakora, an Indian version of vegetable fritters (e. g. onion bhaji).

Prostate: The prostate (from Greek προστάτης - prostates, literally "one who stands before", "protector", "guardian"[1]) is a compound tubuloalveolar exocrine gland of the male mammalian reproductive system.

Prostate Disorders diet:  Heavy starches, sweet stimulants, and highly seasoned foods are entirely forbidden, as they are said to cause direct irritation to the prostate gland and bladder. The diet should also exclude spices, condiments, salt in excess, sauces, and meats, cheese, asparagus, watercress, greasy or fried foods, alcohol, tobacco, and too much of tea or coffee.

Not quite a traditional hot sauce used in western BBQ, but I really do like this Thai chili sauce:

That is good stuff, I use quite a bit of it.

I also like their chili garlic sauce, which also gets a lot of play at the house on pot stickers, in various marinade, in cold Thai beef salad, etc: http://www.huyfong.com/no_frames/garlic.htm




The chili sauce is one of the best. I think the second is too salty for any use other than a marinade or dipping sauce ingredient.  My favorite of all time is:

Not as easy to find as their green or red hot sauces but is hotter and tastes better.
I found that Dave's Insanity and any other sauce that is made from chemical extract rather than actual peppers tastes horrible.

When it comes to the really hot stuff I always look for sauces that use carrots as a base.  One of my favorites is Marie Sharp's from Belize.


I also like a little Tamale with my Tapatio :thumb:

I like Cholula, too, but most places around here carry Tapatio.  I think Cholula's flavor is much tastier.

I'll try a tabasco bath bbq chicken next time.

For asian, I prefer fresh roasted chili oil, extremely mild, but very smooth and has a rich aroma.  Siracha is too spicy for me unless I eat it with a sweet and sour or other sweet fast food dish.  I wouldn't personally use it on "real" asian food.  Ok I take it back, pho with siracha+oyster sauce.  But again, I need the oyster sauce to give the siracha some flavor.

DIY ...

approx 1/2lb fresh, red jalapenos
2 tbl sp dried black bean, soaked and washed
the rind of 2 limes [chopped finely or removed with a zester]
2 tbl sp. brown sugar
a generous amount of chopped [grated or food processored] fresh ginger
juice of two limes

Seed the jalapenos while wearing rubber gloves  :).

Either chop everything finely with a chefs knife or feed it into a food processor.

Simmer gently for 20 minutes and bottle. I freeze mine as it's easy to carve a bit off when needed.

This isn't a sauce, it's a paste. It has a great balance of strong flavours and can be used as an additive to cooking or in small amounts as part of roll-ups, rolls, sandwiches etc.

I find most commercial products far too high in sugar and low in imagination/flavour.

The Tropical Habanero Co. is soooo good.  It's not quite as hot as they imply, atleast in my opinon.  It has a very sweet aftertaste instead of the usual burning that other sauces leave.  You have to try this stuff if your local grocery store carries it.  The black label seems to taste best to me.

As the name implies this is some wicked stuff but it's oh so good. It's the only thing I've ever seen that will male Chili climb out of the bowl to get away from the heat :lol: I don't do as much hot sauce as i used to but i collect green hot sauce  :thumb:

I fell in love with Peri-peri sauce in Portugal and I had chance to sample some variations in Africa -- good with grilled game food.  I tried a few commercial ones but now I have gone DIY.  Generally following this simple recipe http://www.chilliworld.com/FactFile/Hot_Sauce_Recipes/Piri-Piri_Sauce.asp, I vary peppers and little things and experiment.  It's great with grilled meat.

I've become a big fan of BW3's Mango / Habanero sauce the last year or so. It's pretty warm, and has been known to be hard on any parasites dwelling inside your body.
