It's been a real pita for me. On the BEO for our banquet dept we were supposed to serve about 1,400 cranberry spinach salads this week.
We ended up tossing a dozen cases of spinach & spring mix. You really can't take any chances with that; a case of food borne illness can really hurt your business for months. Not to mention the risk to the customer.
