Anybody know if you replace several computer hard drives with a much bigger bigger ones, is it going to take up much more power supply wattage?

Even though the hard drives may be much larger is capacity, depending upon how old the existing drives are, you might go down in wattage.

You should be fine. Now video cards are a whole nother story.
I have 3x4 TB WD Red HD's and 2x1TB M.2 drives in my computer/music server with a 550watt power supply.
