Any WSM fans out there? I just picked up a few mods for my 18" wsm. A LavaLock Quick Coal door mod, the ever popular stainless lid hinge, and a FireDial heat diffuser plate. I've finished the door installation and I'll finish with the hinge tomorrow. My question is regarding the FireDial. It basically replaces the water pan. But I couldn't help to notice, the water pan is a good 4-5" deep. This heat diffuser is a mere 1/16th thick stainless steel. Why couldn't I make use of that extra space and put longer pieces in to hold my grates? I could add 2 more grates to make a sweet chicken wing cooker!!! Anyone try something like this?

Ed, have you used this yet?
My water pan has morphed multiple times, and I'm still looking for a solution.

I have an 18 WSM, I can't comment because I just run it stock with no water pan.
I just wanted to lend some support for another pitmaster
