For inexpensive quality capacitors I'd use panasonic FC or FM. However you should use 4 or double the amount used from there each time you decide to use more (this increases noise filtering).

2 questions -
1) http://www.jameco.com/webapp/wcs/stores/servlet/Product_10001_10001_1984806_-1  Would these be sufficient for use with a 12v PSU? 
2) Could you elaborate a little on the "4 or double" number?   Is there some electrical benefit to using multiples of 4?

Yes those will work.

Everytime you double the amount of capacitors it lowers the ESR/ESL by half.

What would happen if I were to use a quad of cheap 2200F caps I've been gathering while upgrading amps?

What do you think about these United Chemi-Con KZN series, for example EKZN500ELL222ML40S at DigiKey?  A bit pricier than the Pannasonics, but higher ripple current and lower ESR, which I believe are relevant specs for this application?
