When to eat the cob?

How would you eat the corn on the cob with a meal like this?  I have alway found corn on the cob to be a sort of tasty side distraction. Not really part of the main course. Would you recommend eatin the cob before the start of the meal or after or inbetween?.

This is a barbecued t-bone and potatoes with salad.

I would've also bbq'd the corn.  It's sooo good that way IMO.

I will state up front that I am an odd duck.

I don't like food really hot (physically, I love spicy), so for me I would plowed through the corn first, while the steak cooled down to a temp I can consume it at pace at!

Man, I get so hungry looking at that cob... have two - one before and one after. Just throw caution to the winds, you only live once.

I make a very popular grilled corn salad that allows you to eat it whenever you'd like....

Grilled corn
grilled (roasted) red bell
serano
grated ginger
red onoin
cilantro
lime juice
red wine vinegar
evoo
s&p

It makes a great addition to a steak imo.

Btw it may be the angle, but that t-bone looks more like a Porterhouse to me.  :D

How about quantities and measurements? That sounds good but I need detailed instructions. My culinary skills aren't such that I can wing it (yet!).

Its a t-bone with a little cut from the bottom while on the barbie. Had to give it a try..... couldnt wait.

Actually it was sold as a t-bone but could be a porterhouse.

When I worked at the butcher shop that was Porterhouse.  T-bones are usually bone in strip steaks with less tenderloin.  That said there are about a million names for all the cuts.

I'd scrape all that other crap off the plate and eat the tenderloin first.  :thumb:
Just kidding, I'd probably cut the tenderloin off, give it to my wife and eat the rest.
When corn is in season around here I could make a meal of just the corn.  Corn over a fire or grill does indeed taste great.  The oven works too.

I did the cob in first. It was in the way of the baked potato and i needed a clear path. The cob was good and sweet.

Sorry, to me recipes are more about inspiration than they are models for construction, so I always leave that out. I'll do my best to approximate for you. Just keep tasting as you're cooking and you'll get there.  :thumb:

4 ears Grilled corn
1 grilled (roasted) red bell skinned, seeded & diced
1-2 seranos chopped
1t grated ginger
1/2 diced red onoin
1 bunch chopped cilantro
juice of 1 lime
red wine vinegar to taste
2-3 T evoo
s&p to taste

Do the peppers first so they can steam under plastic wrap while you grilled the corn. You can also grill the onion and seranos if you'd like... the lime and cilantro add enough fresh brilliance to keep it balanced.

I like to make the vinaigrette by adding the salt to the lime and vinegar, then add the onion, let it sit for 15-20 and then follow with the oil. This way the salt can melt before you incorporate the fat and the onion pickles slightly and turns a bright magenta.

Once the corn is ready, cut it from the cob into a bowl and add the rest of your ingredients while the corn is still warm.

This is great fresh, but it works a day ahead as well.
