I'd like to just turn up the volume and crossover on my sub's plate amp and use a Behringer crossover. I need the crossover anyway for a sub I'm building and the Behringer will have an extra channel left over.

It would seem that the electronic crossover would be more accurate than the one on the sub's plate amp too.

Go for it!  As long as the sub's XO point is higher than the Behringer's you should be golden.  Plus this way you won't have to hunker down in the corner to tweak the thing.
