I'm thinking of using an older (circa 2007) Acer laptop to hold my iTunes library (all ALAC files from CD rips), and streaming from that via homesharing to an ipod touch in an Pure i20 doc/dac.
Does the sound card in the Acer have any bearing on sound quality in this type of setup?

No.  You are just sharing an iTunes library via WiFi and the soundcard is not in the mix.
