I am thinking of replacing my amp's stock .1uF 400VDC coupling caps with Mundorf .1uF 1200VDC caps and wonder if the vastly increased voltage rating would have any negative affect. Would the Mundorf's form properly "seeing" less than their rated voltage? Would capacitance value be affected at all?

There are some subtle technical differences, but for this purposes, if you can make them fit, they'll work.

I agree with Josh except to say in my experience the sound can change, usually not too much.

Replacing a capacitor with a higher voltage capacitor has virtually no impact to the correct function of the component. This is a non issue.

It might actually since a physically big cap has probably worse HF properties like resonance frequency.
