What are the pros and cons of using a volume control or fixed attenuator
to match amplifier input sensitivities for biamplification?

There aren't any cons.
If you have two disparate amplifiers and need to match voltage gains adding an attenuator to the input of the higher gain amp is the best way to accomplish the goal.
