Spaetzle

I use a recipe from Joy of Cooking. However, I let the mixture sit at least 1/2 hour before cooking, seems the baking powder has some additional time to work, and consequntly makes them quite light. Also, I use a spaetzle funnel that slides back and forth, couldn't be easier.

I use the recipe my mother in law gave me for this (she lives on the french-german border), and it rocks.  Not "that" easy, and requires some elbow grease, but combined w/the pork loin recipe, it rocks.

I'm not sure where the recipe came from that we use - probably the internet.  Personally, I like spaetzle to have some density rather than being light.  Great simple side-dish for schnitzel, goulash or wurst. 

Next I need a good recipe for German style red cabbage for a side.  Yummy.

1/2 cup water
small grating of nutmeg
1/2 teaspoon of salt
1/4 teaspoon of baking powder

Yes, I use milk, not water. Good find.
